Looking for a quick weeknight dinner that’s big on flavor but light on effort? These chorizo smash tacos are your answer. By blending chorizo with ground beef, you get the rich, smoky flavor of chorizo without it being too spicy. Everything comes together right in your skillet or griddle. Melty cheese, crispy tortillas, and plenty of fresh toppings.

Ingredients
- 1 lb. Chorizo
- 1 lb. Ground Beef
- 16 taco-sized flour tortillas (6-inch)
- 1 bag shredded cheese - Mexican Blend
Optional Toppings:
- Sour cream
- Pickled red onion
- Fresh cilantro
- Avocado slices
- Any other favorite toppings!
Instructions
- In a large bowl, mix together the chorizo and ground beef until well combined.
- Divide into 16 portions, then press into thin patties between two pieces of parchment paper.
- Heat a cast iron skillet over medium-high heat. Place a patty in the skillet and cook for about 2 minutes.
- Sprinkle cheese on top of the patty, then press a tortilla over the cheese.
- Flip and cook another 2 minutes, until the tortilla is golden and the cheese is melted.
- Remove from skillet and repeat with remaining patties.
- Serve warm with your favorite toppings.
