Pork Chop Rub

Since we made this rub, we honestly haven’t looked back. It’s one of those recipes that just works. Every single time.
It’s simple, balanced, and brings out the flavor of pasture-raised pork without overpowering it. Once you try it, you’ll probably keep a jar of it on hand like we do.

Directions
Ingredients
- 2 Rehoboth Pork Chops
- 1 tbsp brown sugar (or coconut sugar)
- 1 tsp paprika
- ½ tsp onion powder
- ½ tsp thyme (fresh or dried)
- 1 tsp rosemary (fresh or dried)
- ½ tsp salt
- ¼ tsp black pepper
- optional: a pinch of cayenne
Directions
- Brush olive oil on your pork chops, then generously rub with the seasoning and let sit for a few minutes.
- Cook however you like, whether that’s in a cast iron skillet, on the grill, or in the oven.
- My personal favorite is baking them in the oven at 425°F for 15–20 minutes, or until they reach 145°F internal temperature. It yields perfectly juicy chops every time.
