- Servings: 8
Directions
Ingredients:
- 1 pre-made or homemade pie crust
- 6 large eggs
- ½ cup whole milk (or half and half for extra richness)
- 1 cup cheese of your choice ( I did ½ cup Cheddar + ½ cup Jalapeño Jack)
- ½ cup Rehoboth bacon, cooked & chopped
- 1 cup Rehoboth breakfast sausage, cooked and crumbled
- 1 cup diced leftover ham
- 2 green onions sliced
- ½ tsp salt
- ½ tsp pepper
- ½ tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
Directions:
- Preheat oven to 375°F.
- Prepare Pie Crust:
If using a homemade crust, Roll it out and place into a 9-inch pie dish. Place parchment paper in the bottom and fill with pie weights or dried beans. Bake for 10 minutes. Remove the weights and bake another 5 minutes until lightly golden.
If using a store bought ready to use crust, skip to the next step. - Make the Filling:
While the crust is baking, whisk together eggs, milk, salt, pepper, paprika, garlic powder, and onion powder in a medium bowl until smooth.
Add the cooked bacon, sausage, ham, cheese, and green onions to the pie crust.
Pour the egg mixture evenly over the meat and cheese. - Bake:
for 25–30 minutes or until the center is set and lightly golden. Let cool for 10 minutes before slicing. - Enjoy warm, or refrigerate and reheat slices for a quick and satisfying breakfast all week long.
