Ingredients

Directions

  1. Place the pork butt in a slow cooker.
  2. Sprinkle the cumin, paprika, salt, pepper, and oregano evenly over the pork.
  3. Add enough water to the slow cooker so it comes about ¼ of the way up the sides of the pork.
  4. Cover and cook on LOW for about 6 hours, or until the pork is very tender and easily pulls apart with a fork.
  5. Remove the pork from the slow cooker and shred with two forks.
  6. Return the shredded pork to the cooking juices and keep warm until ready to serve.

Homemade Texas BBQ Sauce

Ingredients

  • 1½ cups ketchup
  • ½ cup brown sugar
  • ½ cup honey
  • ¼ cup apple cider vinegar
  • 2 tablespoons butter
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons Dijon mustard
  • 1 tablespoon + 1 teaspoon chili powder
  • 2 teaspoons black pepper
  • 2 teaspoons salt
  • ½ onion, finely diced
  • 2 cloves garlic, minced

Directions

  1. Melt the butter in a medium saucepan over medium heat.
  2. Add the onion and cook for about 4 minutes, until softened then add the garlic and cook until fragrant. 
  3. Add the ketchup, brown sugar, honey, apple cider vinegar, lemon juice, Worcestershire sauce, Dijon mustard, chili powder, black pepper, and salt.
  4. Stir well and bring the sauce to a gentle boil.
  5. Reduce the heat and simmer for 20–25 minutes, stirring occasionally.
  6. Remove from the heat and allow to cool slightly. For a smoother sauce, blend until smooth. Leave it chunky if you like a little texture.
  7. Refrigerate until ready to use. The flavor gets even better after resting.

To Assemble

  • Hawaiian or Brioche rolls
  • Pulled pork
  • Texas BBQ sauce
  • Dill pickle slices
  • Pickled red onion or fresh white onion

Pile the pulled pork onto the Hawaiian rolls, drizzle with BBQ sauce, and top with pickles and onion
