Ginger Pork Meatballs with Cabbage & Mushrooms
This cozy, nourishing dish is packed with comforting flavors and simple ingredients that come together in one pot. Juicy pork meatballs infused with fresh ginger are baked, then simmered with cabbage, mushrooms, and a savory-sweet broth. It’s a deeply satisfying meal that’s easy enough for a weeknight and flavorful enough to crave again and again. Serve it over jasmine rice or enjoy it as-is!

Ingredients

  • (1 lb) Ground Pork
  • (1 bunch) green onions
  • (1 tsp) salt
  • (2 tbsp) tamari or soy sauce (divided)
  • (2 tbsp) sesame oil (divided)
  • (1/4 cup) panko breadcrumbs
  • (1) egg
  • (1 tbsp) coconut sugar
  • (1 ½ cup) chicken bone broth
  • (1 ½ cup) water
  • (1/2 head) cabbage (purple, green, napa - you pick!)
  • (8 oz.) mushrooms (button, baby bella, your choice)
  • (2 tbsp) fresh ginger, minced

Directions

  1. Preheat the oven to 375°F
  2. Remove a few of the outer leaves of cabbage and core. Cut into 2 inch pieces. 
  3. Wash and quarter the mushrooms
  4. Thinly slice the green onions
  5. In a mixing bowl combine ground pork, salt, 1 tbsp tamari, 1 tbsp sesame oil, 2 tbsp minced ginger,  1/4 cup breadcrumbs, 1 egg. Mix until well combined. Adding more breadcrumbs if needed for meatballs to hold. Scoop them with a tablespoon and form bthe meatballs - about 20. 
  6. Place the meatballs on a parchment lined baking sheet and bake for 12 minutes at 375°F
  7. Heat a deep pan with a lid on medium heat. Add 2 tbsp of oil or butter, then add the green onions and mushrooms. Cook for about 5 minutes
  8. Add cabbage to the same pan and stir. Cook for 1 minute. Add the broth, water, salt, tamari, coconut sugar, and sesame oil. Bring to a simmer then add meatballs
  9. Cover and cook for 10 minutes
